When we found Churro Gnocchi Bites on Instagram, we were floored and knew we need to test the concept ourselves. The original recipe from Bethany Ugarte (@lilsipper) uses cauliflower gnocchi, vanilla flavored collagen, and coconut (or date) sugar to go with cultured probiotic cream cheese for dipping. We chose to go on a route a bit more indulgent, tossing potato gnocchi with melted butter and cinnamon sugar and serving it with a spicy chocolate ganache for dipping. All we can say is, don't know it 'til you try it.
INGREDIENTS
FOR GNOCCHI:
- 1 lb. package store-bought gnocchi
- 1 tbsp. unsalted butter, melted
- 1/2 c. cinnamon sugar
FOR SAUCE:
- 3/4 c. heavy cream
- 2/3 c. semisweet chocolate chips
- 1/4 tsp. ground cinnamon
- Pinch cayenne pepper (optional)
DIRECTIONS
- In a large pot of salted water, cook the gnocchi according to package instructions. Drain and pat dry.
- In a large bowl, toss gnocchi with melted butter. Sprinkle with cinnamon sugar and toss to coat.
- For the sauce: In a medium microwave-safe bowl, microwave cream in 30-second intervals until it starts to bubble, watching carefully to avoid boiling over. Pour hot cream over chocolate, cover with a plate, and let sit 3 minutes. Add cinnamon and cayenne, if using, and whisk until smooth.
- Serve gnocchi with warm chocolate dipping sauce.
